Quiche Lorraine Low-carb | High protein
Equipment
- Food processor (optional)
Ingredients
- 2 cups Almond Flour
- 2 tbsp Butter (soft)
- 1 Egg
- 1/4 cup Shredded parmesan cheese
Filling
- 6 Eggs
- 8 oz Gruyère cheese
- 1 cup Heavy cream
- 8 slices Bacon (cooked and chopped)
- 1/2 Yellow onion (caramelized)
- 2 tbsp Yellow mustard
- 1/4 tsp Salt
- 1/4 tsp Black pepper (ground)
- 1 pinch Nutmeg (ground)
Instructions
Crust
- Preheat your oven to 400ºF with your rack in the middle position. Combine all the crust ingredients in a food processor (you can use a spoon or your hands) and pulse until it starts to crumble.
- Place the dough in a 9in baking dish and spread until the dough is uniform on the bottom of the dish.
- Bake it for 15 to 20 minutes, or until the crust starts to brown. Reduce the oven temperature to 350ºF.
Filling
- With the help of a pastry brush, spread the mustard on the crust.
- Place the onions uniformly on the crust.
- Put the bacon on top of the onions. Try to make an even layer.
- Whisk together the eggs, heavy cream, cheese, salt, pepper and nutmeg. Carefully pour the egg mixture over the top.
- Bake for 30/35 at 350ºF minutes or until the custard is set and golden. Serve it warm!
